Zucchini Brownies!

So delicious, the zucchini adds texture, but not that much taste


So here is the recipe as promised.....

Zucchini Brownies!
Combine in large bowl:
1 cup white flour
3/4 cup whole wheat flour
1/3 cup baking cocoa
1/2 tsp. salt
stir in:
2-3 cups shredded zucchini
Combine the following in a separate bowl and beat with fork until combined. 
1 egg
1/2 cup plain yogurt
1/2-1 cup semisweet chocolate chips
3/4 cup sugar
1/2 cup oil
3/4 cup brown sugar
1 tsp. vanilla


Stir into the zucchini mixture, and spread evenly into a greased 9x13 pan.
Bake at 325 degrees for 25-30 minutes, until it passes the fork or toothpick test.


My housemate got this recipe out of our CSA recipe book, and despite zucchini brownies sounding like an ironic healthy twist, they are actually really really good.
